Today is the World Bread Baking Day. When staying in India there was a bakery who offered delicious Coconut Rolls. I don't have the recipe but I still remember the look and the taste. I changed the flavor by adding the peel of an orange. Enjoy my juicy, delicious Coconut Rolls. Anna
Ingredients for 16 to 20 pieces:
Dough-mixture 1:
5 g corn starch
10 g all purpose flour
100 ml milk
20 g butter
Dough-mixture 2:
250 ml milk
60 g sugar
Dough-mixture 3:
500 g all purpose flour
7 g dried yeast ( = 1 packet)
Filling part 1:
100 g grated coconut
150 ml boiling water
Filling part 2:
orange food coloring
50 g sugar
150 g sweetened condense milk
100 g grated coconut
30 g coconut fat
orange peel abrasion from 1 orange

| put 100 g fine shredded coconut into a bowl |

| pour 150 ml boiling water over it |

| mix with a spoon - put the bowl aside to rest |

| take 10 g wheat flour and 5 g corn starch and mix with a whisk |

| add two tablespoon of milk - take it from the 100 ml milk |

| mix all with the whisk |

| put the rest of the 100 ml milk into a pot and add the mixture - mix all and bring it to a boil |

| add 20 g Butter to the mixture and mix again |

| put 250 ml milk and 60 g sugar into a pot - warm up till the milk is lukewarm - dissolve the sugar - put the pot aside |

| put 500 g all purpose flour into the bowl of your kitchen aid - press a hole into the middle with your fist - put 7 g dried yeast into the hole |

| pour the lukewarm sugar milk to the yeast |

| add the corn starch-flour-butter mixture in the middle |

| use your kneading addition with your kitchen aid |

| let your kitchen aid run on low speed till all comes together - then speed up for a short time |

| when the dough sticks to the kneading stick take it and put the dough on your working space |

| knead the dough by hand till it is no more sticky |

| put the dough into a plastic bowl |

| cover it with a kitchen towel and set aside at a warm place |

| mix coconut with orange food color and put it into a pan - add 50 g sugar |

| mix well and heat up - mix till it feels sticky |

| add 150 g sweetened condense milk - mix again |
![]() |
| add 100 g coconut flakes - mix till it becomes sticky again |

| add 30 g coconut fat - mix till it dissolves |
![]() |
| add the orange peel to the mixture |
![]() |
| take dough when it reaches double of the original size |
![]() |
| put it on the working space with a very thin layer of flour |
![]() |
| use the pizza cutter to make 16 to twenty squares |
![]() |
| take one square and add a table spoon of the filling |
![]() |
| put the two sides over the filling |
![]() |
| put the corner close to you over the filling and roll it to the other corner |

| use the fork to make some holes onto the top |
![]() |
| put the rolls on your baking sheet and cover it with a towel |

| put some milk into a small bowl - use the baking brush |

| splash the ready rolls with the milk - let rise again for 20 minutes - preheat your oven to 180 ° C - put all into the oven |
